Job Search Update

Hello Family and Friends!

 

I wanted to give everyone a quick update on how my job search is going.

 

A couple of weeks back I interviewed and accepted a temporary position with The Expo Group.  This assignment will start July 20th and go to the end of October.  This position is not related to Project Management, but will provide some income for the family and extend our unemployment benefits.  I hope that during this time I can create an opportunity for a PM job at The Expo Group.

 

I am also working with a recruiter on a position with Medhost.  I would be implementing software applications in Hospital Emergency Rooms across the nation.  I should know early this week if they want a phone interview with me.  In the meantime, I have a phone interview with Tel-Tron on Monday, July 13.  This is for a PM position installing emergency call systems for retirement communities.  I will keep you posted on the outcome of these two positions.

 

I also wanted to thank all those who have sent me job leads.  With your help, we can make it through.

Homemade Rocky Road Ice Cream

Here is the homemade rocky rode ice cream we made.

2 1/2 cups of milk
2 1/4 cups of sugar
2 1/2 cups of half and half
5 cups of whipping cream
1 3/4 cups chocolate chips
7 1/2 squares (1 oz. each) semisweet chocolate
1/2 teaspoon of salt
1 1/2 tablespoon vanilla extract
2 1/2 cups mini marshmallows
1 3/4 cups of chopped pecans

Combine milk and semisweet chocolate in saucepan. Stirring constantly, cook over medium heat until chocolate is melted. Remove from heat. Add sugar and salt. Stir until dissolved. Stir in remaining ingredients. Cover and refrigerate 30 minutes. After refrigerating we put mixture in our ice cream mixer and mix for about 45 minutes to an hour with rock salt and ice around the out side of the can. Then we will freeze it so it can set up.

Bread Machine Wheat Bread Recipe

While visiting in Texas, Mom and Dad just loved the wheat bread we made in our bread machine. So, I am posting a recipe for them to use later.

Wheat Bread:
  • 1 1/3 cup of warm water
  • 2 tablespoons of butter softened
  • 3 tablespoons of honey
  • 1 1/2 cups of bread flour
  • 1 1/3 cups of whole wheat bread flour (we grind our own)
  • 1 teaspoon of salt
  • 1 teaspoon of dry yeast
  • 1/2 cup of flax seeds
  • 1/2 cup of sunflower seeds

Put the ingredients in the bread machine in the order listed. Make a divot in the in the dry ingreadients to put the yeast in. This will keep it from activating until it is mixed together. Here are our settings on the bread machine for the bread.
  • Pre-heat - 30 minutes
  • Knead - 25 minutes
  • Rise 1 - 1 hour
  • Rise 2 - 30 minutes
  • Rise 3 - Off
  • Bake - 1 hour and 2 minutes
  • Keep warm - Off
